Check in and a Healthy Winter Soup Recipe!

Early to bed, not so early to rise made today a much better day than yesterday. 🙂

Of course, just as things are starting to slow down at school, they’re picking up double time at work. We are going to be working full speed ahead up until the very last second before the holiday. Thank goodness I have the week between Christmas and New Year’s off!

It’s been a while since I posted a recipe, so I though I would share one of my most favorite winter soups with you. Don’t let this basic lentil soup fool you – it is hearty, delicious, and very healthy (5 points for WW friends)!

1 pound bag of dried green lentils
Salt to taste
3 or 4 carrots, sliced
2 bay leaves
Olive oil for sauteing
3-4 cloves garlic, minced finely
1 onion, chopped
1 stalk celery, sliced
3-4 sprigs parsley, chopped
2 14.5-oz can diced no-salt-added tomatoes
2 tsp. dried oregano
3 Tbsp Lemon

Wash the lentils in a sieve and pick out any bad ones, small stones, etc.
Put in a large pot with 3 quarts water (12 cups) and salt
Bring to a boil and let boil for a few minutes until foam/scum forms
Skim off and discard scum
Add carrots and bay leaves
Reduce heat and simmer 1 hour, stirring occasionally
Meanwhile, about 25 minutes before the hour is over:
In a large skillet, sauté garlic, onion, celery, and parsley in olive oil until soft and clear
Add stewed tomatoes, oregano to skillet
Simmer for about 10 minutes until tomatoes have cooked down some
At this point, the hour should be up on the lentils (or close enough)
Add contents of skillet to soup pot and simmer another 15 minutes to incorporate the flavors
Add lemon juice at the very end

Warning: This makes a TON of soup, between 8-10 servings. 1 serving = 2 cups.

This soup is especially delicious with a little Parmesan cheese sprinkled on top!

Today’s Check in:

Goal: Exercise

Sleep: Slept early. It was awesome.
Exercise: None.
Food: Stayed within allotted points. Greek yogurt, banana, lentil soup, clementine, pretzels, apple, chicken stir-fry w/rice, hot chocolate.
Water: Excellent!
Vitamins: Nada
Weather: Cold, but not too windy and the sun was out.

How I feel: Pretty good. Even managed to look cute today.

New goal tomorrow!

  1. Looks delicious! Lentils are generally inexpensive so this makes a nice budget meal!
